Job description:

Key Tasks:

  • Play a vital role in delivering high-quality meals while maintaining efficient kitchen operations within a remote community setting.
  • Plan menus in consultation with management, considering seasonal availability and customer preferences.
  • Estimate food and labour costs and manage kitchen budgets effectively.
  • Order food supplies and maintain appropriate stock levels.
  • Monitor the quality of dishes at all stages of preparation and presentation.
  • Discuss food preparation issues with Managers, Dietitians, kitchen, and waiting staff.
  • Demonstrate cooking techniques and advise staff on preparation and presentation procedures.
  • Prepare, season, and cook food to a consistently high standard.
  • Explain and enforce hygiene, food safety, and Work Health & Safety regulations.
  • Supervise, select, and train kitchen staff as required.
  • Manage food preservation processes including freezing and storage procedures.
  • Ensure compliance with all relevant food safety and regulatory requirements.

Requirements:

  • Relevant Certificate III or IV in Commercial Cookery (or equivalent qualification).
  • Minimum 2–3 years of relevant work experience as a Chef.
  • Demonstrated experience in kitchen operations, stock control, and food safety compliance.
  • Experience supervising and training kitchen staff.
  • Strong knowledge of food preparation, cooking techniques, and kitchen operations.
  • Ability to work efficiently under pressure in a fast-paced environment.
  • Excellent organisational and time-management skills.
  • High standards of cleanliness and attention to detail.
  • Effective communication and team leadership abilities.
  • Desired: Previous experience working and living in regional or remote communities.
  • Desired: Experience preparing diverse cuisine suitable for multicultural and community-based environments.
  • Desired: Understanding of Indigenous culture and community engagement in remote settings.
