Job description:
Key Tasks:
- Play a vital role in delivering high-quality meals while maintaining efficient kitchen operations within a remote community setting.
- Plan menus in consultation with management, considering seasonal availability and customer preferences.
- Estimate food and labour costs and manage kitchen budgets effectively.
- Order food supplies and maintain appropriate stock levels.
- Monitor the quality of dishes at all stages of preparation and presentation.
- Discuss food preparation issues with Managers, Dietitians, kitchen, and waiting staff.
- Demonstrate cooking techniques and advise staff on preparation and presentation procedures.
- Prepare, season, and cook food to a consistently high standard.
- Explain and enforce hygiene, food safety, and Work Health & Safety regulations.
- Supervise, select, and train kitchen staff as required.
- Manage food preservation processes including freezing and storage procedures.
- Ensure compliance with all relevant food safety and regulatory requirements.
Requirements:
- Relevant Certificate III or IV in Commercial Cookery (or equivalent qualification).
- Minimum 2–3 years of relevant work experience as a Chef.
- Demonstrated experience in kitchen operations, stock control, and food safety compliance.
- Experience supervising and training kitchen staff.
- Strong knowledge of food preparation, cooking techniques, and kitchen operations.
- Ability to work efficiently under pressure in a fast-paced environment.
- Excellent organisational and time-management skills.
- High standards of cleanliness and attention to detail.
- Effective communication and team leadership abilities.
- Desired: Previous experience working and living in regional or remote communities.
- Desired: Experience preparing diverse cuisine suitable for multicultural and community-based environments.
- Desired: Understanding of Indigenous culture and community engagement in remote settings.
